Mixed Mushrooms with Smoked Garlic on Toasted Barra Gallega

Ingredients

  • 8 slices barra gallega bread (3414)
  • 50g unsalted butter (20451)
  • Coldpressed rapeseed oil, for cooking (52323)
  • 1 banana shallot, sliced (6411)
  • 4 smoked garlic cloves, sliced (15945
  • 400g mixed mushrooms (5655)
  • 50ml white wine (10906)
  • 100ml double cream (1897)
  • Coldpressed truffle oil, to taste (35610)
  • ½ bunch chives, chopped (5617)
  • 3 tbsp chopped parsley (5648)
  • Dorset Sea salt (30563)and cracked black pepper (64387)- to taste
  • 100g shaved Grana Padano (1466)

Method

  • Panfry the barra gallega in rapeseed oil, then keep warm to one side..
  • In a large frying pan, heat the butter and a little rapeseed oil. Add the sliced shallot and smoked garlic and gently fry until soft. Add the mushrooms.
  • Add the white wine and reduce by half, add the double cream and a splash of truffle oil and cook until the volume of liquid has reduced and the mushrooms are glazed and creamy.
  • Stir in the parsley, Season to taste.
  • Serve the mushrooms on the toast topping with the chopped chives and shaved Grana Padano.
